History of Nagasaki Castella began since the time the second generation of Fukusaya learned its recipe from Portuguese in 1624 (Kanei 1). The castella is a well-known confectionery of Nagasaki, which is added very-refined sugar, granulated sugar and starch syrup to the well whisked egg, and baked softly. It is recommended to try the specialty handmade castella which the expert skill is needed. There are many long-established stores specializing in castella including the originator, Fukusaya. These have own method each and prepare the arranged new product. It is pleasant to buy each castella a little and enjoy the taste of a long-established store, and compare it.
