What is Shippoku?

"Shippoku" means the round table. Its model is considered to be the home-cooked meal of Nagasaki eating surrounded by round dining table together. Reflecting the history of long exchanges with foreign countries, the dishes lined up is truly multi-national such as Japanese, Chinese, and even South-Barbarian. In full course, there are dozens of dishes lined up. These are Nagasaki dishes such as Ohire (Nagasaki-style soup) expressing the will of the welcome to the guests, pork kakuni which is most well known menu in Shippoku dish, pasty which netlike piecrust put on Japanese stew and baked with the oven, Hatoshi which is deep-fried minced prawns and fish with bread, Nagasaki tempura having slightly sweetness in batter, Nanbanzuke which is deep-fried fish is soaked in mixture of vinegar, soy sauce and sugar.
